One of my favourite soups ever! very easy & when you eat it with bread & Salad it´s considered as a complete healthy meal.
Ingredients: (serves 4)
1 cup orange Lentils
1 medium sized Carrot
1 medium sized Potato
1 medium sized onion
1 medium sized Zucchini
1 medium sized Tomato
1 stick celery
3-4 Garlic clove
2 Tablespoons fresh lemon juice
Salt & cumin
some freshly chopped parsley for decoration (optional)
some fresh cream to top your soup(optional)
Preparation:
wash Lentils & drain & put in a pot
Peel, the Carrot, onion,Potato,garlic & Zucchini & chop them & add to Lentils in Pot.
Cut tomato & Celery stick & add to Pot.
Cover with water & start heating, when they start boiling, reduce heat & leave to simmer for 15-20 minutes & add water whenever it is reduced (Soup thickness is according to your taste)
Add Salt & Cumin & Lemon juice.
With a hand mixer, mix the soup ingredients in the pot till well blended & smooth (don´t forget to remove the Celery stick)
(you can filter your soup in a sieve if you want & this is optional)
Serve in plates with a dollop of cream & some parsley on top.

Ägyptische Linsensuppe
Zutaten:
1 Becher Orange Linsen
1 mittelgroße Karotte
1 mittelgroße Tomate
1 mittelgroße Kartofel
1 mittelgroße Zucchini
1 mittelgroße Zwiebel
1 stange Sellerie
3-4 Konoblauchzehe
2 EL Zitronen Saft
Saltz & Kümmel
Gehackte Petersilie(zum garnieren)
Frisch creme (zum garnieren)
Zubereitung:
Linsen waschen & ablaufen.
Kartofel,Karotte,Zucchini,Zwiebel abschälen & in kleine stuck schneiden.
In einem Topf auf dem Herd, Linsen,Karotte, Zucchini, Zwiebel,Tomato,Konblauchzehe,Sellerie geben , mit wasser abdecken & zum kochen bringen. Dann bei mittlerer Hitze ca. 15-20 minuten kochen lassen.
Mit einem Handmixer, mischen die Suppe Zutaten in den Topf, bis alles gut vermischt ist und glatt. (sie können auch mehr wasser geben)
Mit Salz & Kümmel & Zitronen saft würzten ,& Fertig!
